The environmental and economic impact associated with the waste generated by the food industry and households requires concerted efforts to reduce its volume and increase the rate of recycling along the entire food supply chain. Particularly, there is great potential in better utilizing food by-products and waste streams, and recovery of bioactive compounds represents a promising and cost-effective alternative to their chemical synthesis. This chapter provides a brief overview of high-value compounds that have been extracted from food by-products and discusses the strategies for their recovery. Compounds with recovery previously restricted by the limitations of extraction techniques are also summarized. Lastly, this chapter highlights some antiviral compounds that could be extracted from food by-products for nutraceutical or pharmaceutical applications.
