Phytic acid (PA), is the inositol hexaphosphoric acid, that is, hexaphosphoric ester of cyclohexane (IP6), and possess antioxidant activity. The inositol phosphates present in phytic acid play major role in mediation of cellular responses and thus, help in secondary messengers’ transduction process. Abundantly present in fiber-associated plants and food such as bran, seed grains, legumes (peanuts and soybeans), oil, and kernel seeds, mainly in the phosphorous form. Phytic acid is an essential mineral source that helps for energy development and in the formation of structural elements like cell membranes. PA forms chelates with metal ions such as zinc, calcium and iron, affecting solubility and absorption of minerals and proteins. Moreover, when PA is present at high concentration it prevents the browning and putrefaction of several fruits and vegetables by inhibiting the enzyme polyphenols oxidase. Numerous …
