In recent years, terahertz time-domain spectroscopy (THz-TDS) has attracted an increasing number of researchers to investigate the far-infrared vibrational modes or picosecond dynamic characteristics of a wide range of materials, which has proved to be a promising non-destructive technology for both qualitative and quantitative measurements. Undesirably, the strong absorption of water will considerably weaken the THz signal, which limited further application and development of THz-TDS, especially in the field of agriculture and food.
