The objective of this research was to analyze the antioxidant capacity directly of water‐
extractable nonstarch polysaccharides (NSP) and feruloylated arabinoxylans (WEAX)
following their characterization. NSP were isolated from barley, wheat, and wheat fractions
(germ, bran, and aleurone). WEAX were extracted only from wheat fractions. Antioxidant
