The tubers of 5 Colocasia esculenta cultivars, Bor Kachu, Ahina-Black, Mohkhuti, Tekeli
Kachu and Koni Kachu, were analysed for moisture, dry matter and ash contents at various

Abstract
The tubers of 5 Colocasia esculenta cultivars, Bor Kachu, Ahina-Black, Mohkhuti, Tekeli Kachu and Koni Kachu, were analysed for moisture, dry matter and ash contents at various stages of growth under 4 different spacings (60 × 35, 60 × 45, 60 × 55 and 60 × 65 cm). The most significant changes were observed in immature tuber with a decreased in moisture content and increase in dry matter and ash content with increasing maturity. At harvest, oxalic acid, total acid, ascorbic acid, reducing sugar, nonreducing sugar and starch content were determined and all the cultivars showed varying amount of these contents. Oxalic acids, which is responsible for acidity, was minimum in Ahina-Black. The spacing had no effect on quality attributes in C. esculenta cultivars.
