The present study was carried out with a view to investigate the osmotic dehydration kinetics
in terms of water loss and solute gain. Beetroot slices of 10x10x 3mm size were osmotically
dehydrated in combined aqueous solution of salt (5-25%) and sugar (55-75 Brix) with
solution to beetroot sample ratio of 4: 1 at different solution temperatures ranging from 30-60
