This research aims to design the build of a proofer machine with arduino as a controller to

Abstract
This research aims to design the build of a proofer machine with arduino as a controller to keep the temperature and humidity in the proofer at the desired range. In order to maintain temperature and humidity, two DHT22 sensors are installed at the bottom and center of the proofer, two fans are used to regulate air circulation, and an RTC DS1307 is required to calculate the time. As an interface media used touch screen to provide on/off proofer commands, temperature and humidity information as well as length of proofing process. Test results showed reading accuracy was 0.7% for temperature and 1.06% for humidity. The temperature and humidity range that produces better quality bread dough is in the range of 36-370 Celsius and 83-85% with the value of change in the dimensions of bread dough 108.33% within 80 minutes, faster 20 minutes and 60 minutes compared to bread dough B1 and A1.
