With the advancement of livelihood of human society, the more attention brings towards the
quality of products, especially foods. Nutritional value is an unknown characteristic that
affects our bodies in ways that we cannot perceive. Still, this quality attribute becomes a
necessary factor for consumers, scientists, and the medical profession. In this paper, we
propose a novel approach to evaluate the quality of pomegranate using image processing
techniques.
